Blackberry Cobbler


I have made this cobbler about ten times and it is a winner. As Caitlin Moran says, “Every woman needs: a pair of yellow shoes (they unexpectedly go with everything), a friend who will come and post bail at 4am, [and] a failsafe pie recipe.”

I am so glad that The Pioneer Woman exists because her mantra is pretty much my life when it comes to dessert. “If some is good, more is better.” Definitely check her out: The Pioneer Woman Cooks

Blackberry Cobbler

½ cup (1 stick) butter
1 ¼ cup sugar (1 cup and ¼ separated)
1 cup self-rising flour
1 cup milk
2 cups blackberries

Place the butter in a microwaveable dish and melt.
Pour sugar and flour into a mixing bowl.
Whisk 1 cup of milk into dry mixture.
Mix together well.
Add melted butter and whisk well.
Butter a baking dish.
Take blackberries fresh or frozen work just fine.
Rinse and lightly pat them dry.
Now pour the batter into the buttered baking dish.
Drop in blackberries and try to distribute them evenly.
Now, sprinkle 1/4 cup sugar evenly over the top.
Now place the dish into the oven and bake at 350 degrees for 1 hour, or until golden and bubbly.
